BLUEBERRY CAKE.. for my mum birthday

Buat cake ni sempena birthday my mum ..12/03/13..

   
  Puas pikir nak buat cake aper, sebab my mum tak suka cake yang manis & bekrim-krim bagai. Nak buat chocolate cake, butter cake, marble cake dah slalu sangat, dah muak rasanya. Google2 terjumpa recepi kat blog joyofbaking.com. tapi ade adjust sikit-sikit la aper yang patut..hehe



  Just a simple coffee cake, tapi sedap sangat, kombinasi white butter cake + blueberry + crunchy streusel topping!


Blueberry Cake Recipe

Ingredients:-
Streusel Topping:
1/3 cup (45 grams) all purpose flour
1/3 cup (65 grams) granulated white sugar [I reduce to 50g]
1/2 teaspoon ground cinnamon
1/4 cup (56 grams) cold unsalted butter, cut into pieces

Cake Batter:
1 cup (130 grams) all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup (56 grams) (4 tbsp) unsalted butter, room temperature
1/2 cup (100 grams) granulated white sugar [I reduce to 80g]
1 large egg
1/2 teaspoon pure vanilla extract
1/3 cup (80 ml) milk
2 cups (480 ml) fresh blueberries [I used blueberry preserve]
1 tablespoon lemon juice [1 add]

Method:-
*Preheat oven to 350 degrees F (180 degrees C). Butter, or spray with a nonstick vegetable spray, an 8 inch (20 cm) square baking pan.

Streusel Topping: 
-In a large bowl, mix together the flour, sugar, and ground cinnamon. 
-With a pastry blender, two knives, or your fingertips, cut the butter into the flour mixture, until it resembles coarse. 
-Set aside while you make the cake batter.

Cake Batter:
-In a separate bowl whisk together the flour with the baking powder and salt. 
-In the bowl of your electric mixer, or with a hand mixer, beat the butter until smooth. 
-Add the sugar and beat until light and fluffy. Add the egg and vanilla and beat until incorporated. 
-Add the flour mixture (in three additions), alternately with the milk (in two additions), and beat only until combined. 
-Spread the batter onto the bottom of the prepared pan, smoothing the top with the back of a spoon or an offset spatula. 
-Evenly arrange the blueberries on top of the cake batter and then sprinkle with the streusel topping.
-Bake for about 40 - 50 minutes or until a toothpick inserted in the center of the cake comes out clean and the cake just starts to pull away from the sides of the pan. 
-Remove from oven and place on a wire rack to cool slightly. 
-Serve warm, at room temperature, or even cold.
-Makes about 9 servings.

CHEESECAKE




  Cheesecake yang sedap sangat, ramai yang dah cuba resepi ni. Rasa persis New York Cheesecake kat secret recipe.. hehe. persis jer la.. klau cakap sebijik rasa cam secret mati la kena cerca! Memang akan buat lagi lepas ni. Resepi ni boleh digunakan sebagai basic recipe  dan dipelbagaikan mengikut citarasa, boleh letak oreo, bluebery filling or marble. Thanks biduri sebab share resepi yang marvellous ni.


Cheese Cake

Bahan-bahan:
250g cream cheese
200cc/ml fresh cream/plain yogurt [sy guna uht whipping cream 150ml + yogurt 50g]
2 sudu besar jus lemon [sy guna esen vanilla 1 sudu kecil jer]
3 sudu besar tepung gandum [sy guna cake flour]
2 biji telur
90g gula

Cara-cara:
1. Panaskan oven 170 degree. Sapukan loyang dgn butter atau alas dgn kertas minyak pun ok(oven paper)
2. Masukkan semua bahan-bahan ke dalam mixer atau blander. Mix biar sampai jadi cream
3. Masukkan ke dalam loyang dan bakar selama 40-45 minit
4. Setelah hampir masak atau selepas 30 minit bolehlah letak aluminium foil untuk mengelakkan permukaan hangus.
5. Bila sejuk, simpan dalam peti ais semalaman untuk mendapatkan rasa cheese cake yang sedap.

***My method:->
-Filling: putar cream cheese & gula hingga bekrim, masuk tepung & putar, 
then masuk telur satu-persatu, putar lagi, masuk whipping cream+yogurt, putar sehingga sebati.
-Crust: biskut marie dikisar + butter cair + gula 1sudu. gaul sebati tekan-tekan bagi rata pada dasar loyang, bakar kejap dalam 5 minit.
-Lepas tu masukkan filling & bakar cheesecake guna kaedah water bath/bain marie.
~Bila dah masak renggangkan pintu oven, biar cheesecake dalam oven lebih kurang setengah jam.  
~Then bleh keluarkan dari oven sejukkan sehingga suhu bilik, pastu masukkan dalam petiais, sejukkan selama 4 jam / semalaman.
~Dah siap bleh la makan plain camtu jer or letak bluebery filling.. Slurp :p
~Tips nak potong cheesecake: pastikan guna pisau tajam celup dalam air panas/mendidih dan di lap. Baru potongan nampak cantik jer & tak comot.
