BLUEBERRY CAKE.. for my mum birthday

Buat cake ni sempena birthday my mum ..12/03/13..

   
  Puas pikir nak buat cake aper, sebab my mum tak suka cake yang manis & bekrim-krim bagai. Nak buat chocolate cake, butter cake, marble cake dah slalu sangat, dah muak rasanya. Google2 terjumpa recepi kat blog joyofbaking.com. tapi ade adjust sikit-sikit la aper yang patut..hehe



  Just a simple coffee cake, tapi sedap sangat, kombinasi white butter cake + blueberry + crunchy streusel topping!


Blueberry Cake Recipe

Ingredients:-
Streusel Topping:
1/3 cup (45 grams) all purpose flour
1/3 cup (65 grams) granulated white sugar [I reduce to 50g]
1/2 teaspoon ground cinnamon
1/4 cup (56 grams) cold unsalted butter, cut into pieces

Cake Batter:
1 cup (130 grams) all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup (56 grams) (4 tbsp) unsalted butter, room temperature
1/2 cup (100 grams) granulated white sugar [I reduce to 80g]
1 large egg
1/2 teaspoon pure vanilla extract
1/3 cup (80 ml) milk
2 cups (480 ml) fresh blueberries [I used blueberry preserve]
1 tablespoon lemon juice [1 add]

Method:-
*Preheat oven to 350 degrees F (180 degrees C). Butter, or spray with a nonstick vegetable spray, an 8 inch (20 cm) square baking pan.

Streusel Topping: 
-In a large bowl, mix together the flour, sugar, and ground cinnamon. 
-With a pastry blender, two knives, or your fingertips, cut the butter into the flour mixture, until it resembles coarse. 
-Set aside while you make the cake batter.

Cake Batter:
-In a separate bowl whisk together the flour with the baking powder and salt. 
-In the bowl of your electric mixer, or with a hand mixer, beat the butter until smooth. 
-Add the sugar and beat until light and fluffy. Add the egg and vanilla and beat until incorporated. 
-Add the flour mixture (in three additions), alternately with the milk (in two additions), and beat only until combined. 
-Spread the batter onto the bottom of the prepared pan, smoothing the top with the back of a spoon or an offset spatula. 
-Evenly arrange the blueberries on top of the cake batter and then sprinkle with the streusel topping.
-Bake for about 40 - 50 minutes or until a toothpick inserted in the center of the cake comes out clean and the cake just starts to pull away from the sides of the pan. 
-Remove from oven and place on a wire rack to cool slightly. 
-Serve warm, at room temperature, or even cold.
-Makes about 9 servings.

Orange Crumble Muffin

  Assalamualaikum, hai sumer.. huhu.. Baru-baru ni wat muffin, tapi baru hari ni nak update coz internet tingtong jap. buat masa tengah mc lak tu. Kebetulan ada orange kat umah. Nampak jer buah oren mula la terbayang nak korban buat sesuatu, tengah bosan lak masa tu. My mum suruh buat kek oren jer, tapi cam boring lak. dah lama tak buat muffin, so buat mufifn jer la, senang pun senang, kacau-kacau jer kan, takyah guna mixer segala.

 Google punya google terjumpa satu resepi ni kat blog izahdaut yang glamer dengan mapinyer.. yer la head line pon 'Izzah Muffin Lover' katanya, harus la expert buat muffin kann. Pemilik asal resepi ni dari terry @ allrecipe. Saye ade ubah sikit resepi ni dan terlebih rajin buat topping crumble lagi. Memang tak rugi mencuba.. nyum2 sangat! Thanks izzahdaut sebab share resepi. ORANGE CRUMBLE MUFFIN

bAHAN-bAHAN :-P
2 cawan tepung
2 sudu teh baking powder
1/4 sudu teh soda bikarbonat
1 sudu teh garam
1/2 cawan gula halus [saya guna 3/4 cawan, rasa just nice]
1 sudu besar parutan kulit oren [saya letak 1 1/2 sudu besar]
1/2 cawan butter cair [saya guna 1/4 c butter + 1/4 c minyak jagung]
2/3 cawan jus oren [saya guna jus oren + susu segar sikit]
2 biji telur
1/2 cawan kacang walnut [saya letak kismis jer]

topping: (saya tak letak, saya buat topping crumble)
1 sudu besar butter cair
1/4 cawan gula perang
1/2 sudu teh ground cinnamon






















cARA :-p
-Campurkan tepung, baking powder, soda dan garam, kemudian ayakkan ke dalam mangkuk yang besar.
-Masukkan pula gula halus dan parutan kulit oren. Kacau sebati.
-Satukan jus oren, butter cair dan telur. Kacau sebati dan tuang ke dalam mangkuk tepung tadi.
-Gaul semuanya supaya bersatu, tapi jangan terlalu lama cukup sekadar semuanya sebati.
-Masukkan ke dalam muffin tray.
-Untuk topping, tabur sedikit kismis, kemudian letak adunan crumble tadi menggunakan garfu.
-Bakar muffin pada suhu 175 / 180 C selama 20-25 minit.
