Pumpkin Chocolate Chip Cookies



  Penah makan biskut labu? camne rasa dia? nak tau? HEhe.. Cookies ni tak rangup krup krup macam chocolate chip cookies yang besa tu yer, tekstur nya agak cakey. Not bad, Cookies yang lembut dan enak dengan rasa labu dan chocolate chip. Sedap dimakan panas-panas.



Pumpkin Chocolate Chip Cookies

Ingredients:
1 cup (2 sticks) unsalted butter, softened
1 cup white sugar [reduced to 2/3 cup]
1 cup light brown sugar
2 large eggs
1 tsp. vanilla extract
1 cup canned pumpkin puree
3 cups all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
2 cups (12-oz bag) semi-sweet chocolate chips

Steps:
-Heat the oven to 350 F. Spray cookie sheets with nonstick spray or line with parchment paper. 
-Using a mixer, beat the butter until smooth.
-Beat in the white and brown sugars until the mixture is light and fluffy.
-Beat in the eggs 1 at a time, then mix in the vanilla and pumpkin puree.
-In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg and cloves.
-Slowly beat the flour mixture into the batter. Stir in the chips.
-Scoop the cookie dough by heaping tablespoons onto the prepared cookie sheets and bake for 15-17 minutes or until cookies are brown around the edges.
-Remove cookie sheets from oven and let them rest for 2 minutes. Transfer to wire racks and cool completely.

BLUEBERRY CAKE.. for my mum birthday

Buat cake ni sempena birthday my mum ..12/03/13..

   
  Puas pikir nak buat cake aper, sebab my mum tak suka cake yang manis & bekrim-krim bagai. Nak buat chocolate cake, butter cake, marble cake dah slalu sangat, dah muak rasanya. Google2 terjumpa recepi kat blog joyofbaking.com. tapi ade adjust sikit-sikit la aper yang patut..hehe



  Just a simple coffee cake, tapi sedap sangat, kombinasi white butter cake + blueberry + crunchy streusel topping!


Blueberry Cake Recipe

Ingredients:-
Streusel Topping:
1/3 cup (45 grams) all purpose flour
1/3 cup (65 grams) granulated white sugar [I reduce to 50g]
1/2 teaspoon ground cinnamon
1/4 cup (56 grams) cold unsalted butter, cut into pieces

Cake Batter:
1 cup (130 grams) all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup (56 grams) (4 tbsp) unsalted butter, room temperature
1/2 cup (100 grams) granulated white sugar [I reduce to 80g]
1 large egg
1/2 teaspoon pure vanilla extract
1/3 cup (80 ml) milk
2 cups (480 ml) fresh blueberries [I used blueberry preserve]
1 tablespoon lemon juice [1 add]

Method:-
*Preheat oven to 350 degrees F (180 degrees C). Butter, or spray with a nonstick vegetable spray, an 8 inch (20 cm) square baking pan.

Streusel Topping: 
-In a large bowl, mix together the flour, sugar, and ground cinnamon. 
-With a pastry blender, two knives, or your fingertips, cut the butter into the flour mixture, until it resembles coarse. 
-Set aside while you make the cake batter.

Cake Batter:
-In a separate bowl whisk together the flour with the baking powder and salt. 
-In the bowl of your electric mixer, or with a hand mixer, beat the butter until smooth. 
-Add the sugar and beat until light and fluffy. Add the egg and vanilla and beat until incorporated. 
-Add the flour mixture (in three additions), alternately with the milk (in two additions), and beat only until combined. 
-Spread the batter onto the bottom of the prepared pan, smoothing the top with the back of a spoon or an offset spatula. 
-Evenly arrange the blueberries on top of the cake batter and then sprinkle with the streusel topping.
-Bake for about 40 - 50 minutes or until a toothpick inserted in the center of the cake comes out clean and the cake just starts to pull away from the sides of the pan. 
-Remove from oven and place on a wire rack to cool slightly. 
-Serve warm, at room temperature, or even cold.
-Makes about 9 servings.

Nigella's Chocolate Chip Muffin




Chocolate Chip Muffin

Bahan-bahan:
250gm tepung
2 sudu teh baking powder
1/2 sudu teh soda bikarbonat
2 sudu besar serbuk koko (sy letak 3 sudu)
175gm gula
150gm coklat cip
250ml susu segar
90ml minyak (sy guna minyak jagung)
1 biji telur gred A
1 sudu teh esen vanilla

Cara-cara:
1. Gaul semua bahan kering dalam satu mangkuk.
2. Gaul bahan basah dalam mangkuk lain n masukkan campuran bahan kering tadi. gaul rata, masukkan coklat cip, gaul lagi.
3. Letak dalam papercup, tabur coklat cip lagi jika suka. bakar selama 20min.
